Donut muffins of course.


I made these this weekend because my kids love donuts and they love muffins so the two together must be better.  I found this recipe on Pinterest from Somewhat Simple
These were very good and my kids devoured them. Well Mara devoured one and licked the glaze off another, but they were a hit.  I loved the hint of nutmeg and the not over powering glaze on top.  However these are more like a cake donut texture and not the fluffy yeast donut kind.  I wonder what they would have been like fried?  Hmmm? I did not use their glaze recipe because I have my own.  Here is what I used for the 
chocolate glaze which was my kids favorite.

Chocolate Glaze:
1 cup sifted powdered sugar
2 Tbs unsalted butter
1 oz semi sweet baking chocolate
2-3 Tbs milk(to texture)
1tsp vanilla

Place the butter and chocolate in a microwave safe bowl.  Melt in microwave on high stirring every 30 seconds.  This should take about a minute to a minute and a half.  Once the chocolate is smooth and melted add the vanilla and stir.  Then sift the powdered sugar into the bowl and add 2 Tablespoons of milk.  Stir together until combined, then add one more tablespoon of milk.  Stir until smooth and silky in texture.  If the glaze is too thick add a little more milk a half tablespoon at a time.  If it is too thin then add a little more powdered sugar.  The glaze is the proper consistency when you lift up your spoon and the drips that fall into the bowl hold their shape for a couple seconds before absorbing back into the glaze.  Once the muffins are cool just dip them into the glaze and allow the excess to drip off.  Then set aside for about 10 to 15 minutes until the glaze hardens. Then Enjoy!
