Chocolate Chip Oatmeal cookies


Chocolate chip oatmeal cookies
Since we are going on a road trip tomorrow I thought I'd whip up some of my kids favorite cookies.  Normally I like to bake from scratch but if I can use a few shortcuts to save time I'm all for it.  These are made with packaged cookie mix and then lots of other things thrown in to make them super yummy.  


My good friend Shanna makes cookies called monster cookies.  They are huge and soft and wonderfully packed with chips, oats and yummy goodness.  Everyone loves her cookies and there are never any leftovers.  They are truly wonderful.  These are not her monster cookies but they were my inspiration for making these cookies. 

This makes about 3 dozen cookies if you don't need that many just cut it in half. 

What you need:
2 bags Chocolate Chip cookie mix
2 large eggs
1 cup butter softened
1 tsp vanilla
1 cup oatmeal
1/4 cup flax seed (good for you and gives it a light nutty flavor)
1 cup white chocolate chips

and all the extra stuff.
Heat the oven to 350 degrees.  Place all the ingredients in a large bowl.  To mix this I use my hands (make sure you wash them first), however you may use a spoon or spatula just the same.  Do not use an electric mixer it won't work well with the chips in the mix. 
 
I love my icecream scoop

Use a medium sized ice cream scoop to form the cookies.  If you don't have a scoop just use a regular kitchen spoon.  I love my ice cream scoops.  I have three sizes and use them for so many things.  I do use them for ice cream but they work great for cookie dough, pancakes, muffins, cupcakes, and truffles to name a few.

Place the dough about 2 inches apart on an ungreased cookie sheet, then place in the preheated oven for about 10-12 minutes or until lightly browned.  If you like your cookies
crispy leave them in a little longer.  I prefer mine soft and chewy.  Let the cookies sit for about five minutes and then transfer to a cooling rack or wax paper to cool completely.

  2. is this the small bag of chocolate chip cookie mix or the big one? the one I have is 17.5oz and says it makes 3dz-it is the bigger bag. thanks

    1. Yes this recipe calls for two of the 17.5 oz bags. But you can use one bag and just half the ingredients.
