Ice Cream Pie


Even though summer is almost over it's never too late to share the love of ice cream pie.  It's the perfect dessert for summer or any time of year really.  I love it because one it tastes really good and two it's super easy to make and three the leftovers can be thrown right back into the freezer.  It's the perfect thing for a hot day with friends.


What you'll need.
Beware the list of ingredients is very short and sweet.  You will need:
1 container of chocolate chip cookie dough ice cream
1 8oz container of cool whip
1 oreo pie crust
1 jar of hot fudge
Step 1
First remove the plastic cover from the pie shell (do not throw away) and fill the crust about 3/4 full with ice cream.  The ice cream will be the perfect consistency when you get home from the store.  Don't place it in the freezer and then try to do this later because the ice cream will be too hard and you'll have to let it thaw and then it will thaw too much or not enough and it's just a pain.  Right when you get home from the grocery store spread the ice cream in the pie shell and it will seem so easy, I promise. 



Hopefully you haven't thrown away the plastic pie shell cover because you still need it.  It works great as a cover for your pie (who knew).  Remove the paper label and glue from the plastic, flip it over and cover your pie.  Then place it in the freezer for 3 to 4 hours and let the ice cream get nice and firm.   

Step 2
Next melt your hot fudge by following the directions on the jar.  Then pour onto the pie, enough to cover the ice cream.  Cover with plastic lid and refreeze for 3 hours. 


Step 3
Now spread most of the cool whip over the pie.  Don't spread it all the way to the edge because you will need that open to place the plastic lid back on.  Leave about an inch free of cool whip, this way it won't get squished.  Replace your plastic lid and freeze for another 2 to 3 hours.  When you are ready to serve let the pie sit out for about 15 minutes before you cut it.  This makes it easier to cut and eat.  You can also garnish the pie with chocolate shavings, cookie crumbs, nuts, or ice cream sprinkles.

Notes for the chef:
What I love about this recipe is that you can use any number of combinations of ice cream, pie crust and ice cream topping.  The recipe I have here is really just a suggestion.  You can create a pie with your favorite ice cream flavor and any of the readymade cookie crusts at the store.  You can also use caramel topping instead of hot fudge.  Here are a few more combos for consideration...


shortbread crust with:  Cherry Chocolate chip and hot fudge
                                  Butter Pecan and caramel topping garnished with pecans
                                  Chocolate chip cookie dough and caramel topping
                                  Peppermint ice cream with hot fudge garnished with crushed
                                  peppermint candy
oreo cookie crust with:Oreo cookie ice cream and hot fudge
                                  Double fudge brownie and hot fudge (so rich)
                                  Chocolate fudge swirl and hot fudge
                                  Rocky Road with caramel topping and garnished with chopped
                                  peanuts.
                                  Mint Chocolate chip ice cream with hot fudge


 These are just a few ideas; there are tons of different combinations out there. 
Also this recipe can easily accommodate two pies.  I typically make two at a time because one pie usually isn't enough.  If you want to make two pies just use the larger 16oz coolwhip container and buy two pie crusts.  The Hot fudge jar will cover two pies easily and one container of icecream will fill two pies as well.

  1. As I read this recipe, the first thought that came to mind is to put banana slices on top as a garnish. A fruit topping would add a lot of color.

  2. Yes. That sounds wonderful. You'd have to add the fruit right before serving and remove it before puting it back in the freezer for leftovers. You could make a banana split pie...mmmm. Or even strawberry shortcake with the shortbread crust and strawberry icecream and strawberrys on top. Yum.
