Cracker Cookies

My good friend Aana gave me this recipe a few years ago.  I will be forever in her debt for sharing these treats with me.  They are the kind of thing that I can throw together with just a few ingredients that I usually have in my pantry.  These are perfect for gifts, entertaining, or a quick treat for the family.

I know these are called cookies but they are more like a toffee/brittle type thing.  They are super easy and soooo delicious.  If you like salty and sweet then you will love these buttery, salty, sweet little confections.

Here's what you'll need
1 sleeve of saltine crackers
1 cup butter (2sticks, unsalted)
1 cup firmly packed brown sugar (light or dark, I've used both)
12oz package semisweet chocolate chips
1 cup chopped nuts (I like slivered almonds but you can use walnuts or pecans)

Heat the oven to 400 degrees.

step1

Spray a cookie sheet with cooking spray and layout the crackers so they cover the entire bottom of the pan. If you have to break a few to make them fit that's fine.

step2
Next melt the brown sugar and butter in the microwave and bring to a boil for 2 minutes. Remove from the microwave and whisk to combine the ingredients.  Be careful it will be very hot.

step3

Pour the mixture over the crackers in the pan.  Try to spread it around with a spatula and cover the crackers without moving them out of place.

step4
Place in the preheated 400 degree oven and bake for 5 minutes. You will see the mixture bubbling and oozing all over the place. Remove them from the oven and they should look kind of caramelized and gooey.

step5
Sprinkle the entire bag of chocolate chips on top of the hot crackers.  Let them sit until the chips have melted then spread evenly over the crackers.

step6
Immediately sprinkle nuts on top of soft chocolate.  Let the pan cool in a cool dry place.  I leave mine in the pantry but if you are in a hurry the fridge or even freezer will do.

Once the chocolate is completely cooled you can cut them or break them into 1to2 inch squares and serve. These keep very nicely in a container or plastic bag for about a week.
So yummy.  Hope you enjoy!
