Apple Cinnamon Muffins


Fall is right around the corner but I just couldn't wait that long to start baking with apples. I mean really does it have to be fall to bake with apples?  I don't think so. So lets bake some Apple Cinnamon muffins please. 




For these yummy, moist and delicious muffins I modified my Grandma Porter's Apple Bread recipe.  If you never tried it you are seriously missing out.  It's loaded with apples making it super moist and your house smell amazing while it bakes.  For the muffins I wanted them to be a little less dense than the bread but still loaded with apples.  I added some yogurt to the recipe and it worked beautifully.  I got a light fluffy moist muffin filled with appley goodness.  Let's do some baking. 

Apple Cinnamon Muffins
makes 24  muffins

ingredients:
3/4 cup oil
1 1/2 cup Sugar
2 Eggs
3/4 cup yogurt (plain or vanilla)
1 tsp Vanilla
2 3/4 cup sifted flour
1 tsp Baking soda
1 tsp Salt
1 1/2 tsp Cinnamon
3 cups diced baking apples ( 2 large or 3 medium)*
1 cup chopped walnuts (optional)

*I prefer to use Breaburn or Granny Smith apples. You want to use a tart apple not sweet.     


Before you even crack an egg ...

-Sift your flour, baking soda, and salt together in a bowl and gently mix them together. 
-Dice three cups of apples. 
-Grease your muffin pans
-Preheat the oven to 350 degrees.

Mix it:
-In a large bowl mix the oil and sugar together, then add the eggs.  Next add the vanilla and yogurt.  You can use Greek or regular yogurt for this.  If you don’t have yogurt handy buttermilk will work too. If you want to use regular milk you should add a teaspoon of Baking powder to the mix.

-Stir in the dry ingredients that have been sifted together, to the wet ingredients.  Then add the diced apples and mix until just incorporated.  

-Using a large ice cream scoop fill your muffin pans 3/4 full.  Then bake for 20-25 minutes or  until the the top springs back when touched and they are light golden brown.  



- Because these are so moist, they are great fresh but only last for a few days outside the fridge   or freezer.  If you want them to last longer you can easily freeze them and take out as many     as you need when you need them.  They can thaw just by sitting on the counter for 30 min or   place in the microwave for 1 min.
