Pumpkin Bread


There is no better way to welcome in Fall than warm freshly baked pumpkin bread. 





 The smell of cinnamon, cloves and pumpkin is so inviting and comforting that this time of year I must have a pumpkin pie candle burning in the kitchen to make me feel at home.  The baking of pumpkin bread spreads that cozy, autumny(not a real word) feeling throughout the entire house.  Can you tell I love Fall?


Here is what you will need for my warm and cozy pumpkin bread. 


16 oz  canned pumpkin (not the pumpkin pie mix)
1 2/3 cup sugar
2/3 cup canola oil
2  teaspoons vanilla
4  large eggs
3  cups flour
2  teaspoons baking soda
1/2 teaspoon baking powder
1  teaspoon salt
1  teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg

Move oven rack to lowest position and preheat oven to 350 degrees. Grease the bottom of two loaf pans.


Step 1

Mix pumpkin, sugar, oil, vanilla and eggs together in a large bowl. 

Step 2
Sift together the dry ingredients and stir in to the pumpkin mixture.

Step 3
Next divide the batter evenly between the two loaf pans and bake for 50 to 60 minutes or when a knife inserted comes out clean. 


Cool the bread for 10 to 15 minutes in the pan and then remove and place it on a wire rack to finish cooling. 


This bread is good plain or warm with butter or even cream cheese.  Hope you enjoy!
