Pumpkin Pancakes


With the chill of fall in the air I find myself craving warm spiced pumpkiny(not a real word but it should be) things.  I also crave eggnog but that's another post entirely.  These pancakes are the perfect way to warm you up on a cool autumn morning.  Also my kids love them so they've got to be good.

What you'll need.

2 cups milk
1 cup canned pumpkin puree (not the pumpkin pie mix)
1 egg
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla
2 cups all-purpose flour
1/4 cup brown or granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves

 In a large bowl mix together the pumpkin,sugar, milk, egg and vanilla.

Sift together the dry ingredients and add to the wet mixture.  Stir until just combined and there are no lumps.  Heat up a non stick griddle over medium high heat.  A good way to test if the griddle is hot enough is to sprinkle some water on it.  If the water sizzles and dances all over the pan then it is ready.  Scoop 1/4 cup of the batter onto the griddle and cook until lightly browned on both sides.  These are a tad bit denser than typical pancakes so it takes a little bit longer to cook. 



Serve these warm with butter and syrup or with homemade applesauce and whipped cream or just grab one and eat it on the go(like my Mara).
